Hopefully you’re not already in for the night, because I’ve got a great easy sweet potato pancake recipe for you to try this weekend for breakfast!
If you don’t already have the ingredients, don’t worry there’s not many. Just a quick stop at the grocery store will do.
In advance you’ll for sure need a blender. (Any size, a smoothie blender works). In addition, a griddle or skillet that’s great for cooking pancakes!
- Set your griddle/cooking pan to a low medium and spray with non stick spray. Personal favorite is coconut.
- 6-8 oz. ALREADY COOKED sweet potato
Ingredients that go in the blender:
🔹2 eggwhites (or regular eggs)
🔹1/4 cup oats
🔹1 full scoop protein powder (optional)
🔹 your preferred amount of cinnamon
🔹1/8 baking powder to make them fluffy!
🔹6 oz cooked sweet potato
- Can add a dash of vanilla extract for a sweeter taste!
🔷 MUST BLEND ALL TOGETHER & MAKE SURE TO WAIT 5 MINS AT LEAST SO BATTER CAN THICKEN🔷
